It’s been a great start for the Farm-to-Table Program. Between getting to know one another, determining projects, redesigning the kitchen a few times, sourcing food from our neighbors, and cooking delicious food everyday, the F2T team has only completed it’s first full week. With so many good things already happened, it is safe to say that many more will come! Plans for the team include: making cheese, fermenting kimchi, drying out herbs and spices, and canning pickles and jams.
Though there are some great plans in store, cooking for 40 people everyday entails quite a bit of time in the kitchen preparing the food, especially when everyday’s goal is to create an extravagant plate of delicious and healthy food! This past week, some of the meals the team created included: plantain burgers with fresh mustard green chimichurri sauce, yuca gnocchi with garden fresh basil pesto, grated eggplant chili, chickpea falafel with homemade wraps and creamy tzatziki sauce, and many other delicious goods. The team even experimented making some deserts like: brown sugar caramel coated bananas, and melted chocolate sauce covered pineapples…”so yum”!

Plantain Burger with Chimichurri Sauce Recipe. (serves 4)
2 large green plantains
1 medium onion (finely chopped)
4 cloves garlic (finely minced)
salt & pepper + other spices to taste
8 oz mustard green — or other green with a kick
5 cloves garlic
1 c. olive oil
salt & pepper to taste
1.) Peel and chop plantains into 1/2 inch chunks
2.) Boil in water until easily crushable with fingers
3.) Mash plantains and mix in onions, garlic, and s&p and other spices to taste.
4.) Form burgers and fry on medium heat on oiled frying pan.
1.) Finely mince and crush both the mustard greens and garlic (a food processor works great!)
2.) Combine mustard greens, garlic, and oil, and mix thoroughly.
3.) Add s&p to taste.
Put the chimichurri sauce on the burgers and serve with rice and a salad for a full, delicious meal!
